This sparkling wine comprises equal parts Pinot Noir and Chardonnay. It has a bright, golden hue with very fine bead. The base wine was fermented for 10 months using wild yeasts – approximately 40% in old French oak barriques and the balance in stainless steel. Following tirage, it underwent three years on lees in bottle before being disgorged.
It has aromas of baked apple, strawberries, marzipan and brioche, with orange peel on the palate. The three years on lees gives this wine a lovely texture with great focus, whilst ensuring there is no harsh acidity.
